Our Wine Wednesdays, include one *free sample from each of our hand selected fine wine features (up to four wines). New wines are chosen each week. This week we welcome Bill back to the bar. Bill is great, we love him.

Houchart Provence côtes de provence Rosé
Cabernet-sauvignon – Cinsault – Grenache – Syrah. Salmon pink. Strawberries, red berries.Lively and fresh, with citrus fruit aromas and plenty of fullness. Grown on Clay and limestone soils, rough-textures, formed from the decomposition of the mother rock from the surrounding mountains. Stainless steel fermentation.

Château Graville-Lacoste Graves Blanc
75% Sémillon, 20% Sauvignon Blanc, 5% Muscadelle. Hervé Dubourdieu’s easy charm and modest disposition are complemented by his focus and ferocious perfectionism. He prefers to keep to himself, spending most of his time with his family in his modest, tasteful home, surrounded by his vineyards in the Sauternes and Graves appellations. Roûmieu-Lacoste, situated in Haut Barsac, originates from his mother’s side of the family, dating back to 1890. He also owns Château Graville-Lacoste and Château Ducasse, where he grows grapes for his Graves Blanc and Bordeaux Blanc, respectively. In the words of Dixon Brooke, “Hervé is as meticulous a person as I have encountered in France’s vineyards and wineries. Everything is kept in absolutely perfect condition, and the wines showcase the results of this care – impeccable.” 45-48 year old vines on Clay & Limestone on fissured rock. Lychee, citrus zest, petrol, lemongrass on the nose. Unfiltered before bottling so that little bit of interesting funk is definitely there. Initial silkiness gives way to an assertive, austere mid-palate of tangy acidity + minerality, but with a surprising fullness on the palate. White grapefruit pith & lemon zest. Perfect for oysters.

Domaine Petroni Corse Rouge
50% Niellucciu, 35% Syrah, 15% Grenache. 25 year old vines. Domaine Petroni is located close to the lake Diana and has been created in 1885. It is an idyllic location, drenched in sunlight, overlooking the tranquillity of the Mediterranean Sea and has all of the natural qualities needed for an exceptional wine. It is now run by the Ramazotti brothers. Its beautiful white stone building is symbolic of the tradition, natural produce and respect for the environment that prevail at the estate. This red wine has a ruby hue with violet hints. On the nose, the wine offers aromas of strawberries, blackcurrant and raspberries as well as spice and some minerals. Smooth and supple on the palate with some sea shore and good firm tannin. Gorgeous.

Marietta Cellars Game Trail Cabernet Sauvignon
This south-facing vineyard is perched at 1400 feet of elevation overlooking the Yorkville Highlands. Coastal influence, warm days and rocky hillsides combine to create a Cabernet Sauvignon with extraordinary intensity and clarity. Wild boar, deer and mountain lion create game trails that encircle the vineyard and guide us into the woods while hunting wild Porcini and Chanterelle mushrooms. Much like the air out at the Yorkville ranch, this wine is fresh and bright. With more acidity and focus on red fruit flavors than most Cabernet, this wine is sizable and will age for decades, but has a gorgeous, perfumed elegance that is accessible now. The Bilbro family is by far one of our favorite wine making families in California. Sadly the patriarch of the family, Chris, passed away earlier this year. Whether he was helping the disabled, crafting delicious wines or raising four spirited sons, Chris Bilbro was never one to toot his own horn. For 40 years, he quietly worked at the his Sonoma County winery, making bold red blends before such wines were on trend. He also set an example for his sons, three of whom are now winemakers. Bilbro passed away Jan. 27, after battling cancer for several years. He was 72.
