Oltretorrente Cortese Colli Tortonesi DOC

Method of fermentation: Whole grape clusters put in the pneumatic press, fermentation in temperature controlled tanks. 8 months aged in steel tanks, 3 months in bottle before release. No malo.

Green apple with really pronounced minerality, this wine is snappy, bright but not thin. It’s a really “complete” wine akin to top-tier Chablis in style. Many types of fish are appropriate with this one: I had it with a rare tuna steak recently, milder white-fleshed fish like Dover sole in traditional French preparations works well, too.

Oltretorrente Barbera
100% Barbera, harvested from 2 parcels (Gatti and Battorella) amounting to one hectare, planted between 1920 and 1960 on calcareous clay with southern exposure. There are even some bush vines here, rarely seen in Piedmont. Harvested between September 27th and 29th at low yields of 4,500 kg/ha (about 26 hl/ha). The grapes are destemmed and are fermented sponateously in concrete tanks. Maceration for the 2018 vintage lasted a full 60 days. The wine was aged for 18 months in used barriques of 225 and 300L. Bottled with a wide filtration and bottled aged for an additional six months before release in January 2019. 3,500 bottles made.

Winemaking Notes:Hand harvested into small boxes. Fermentation in small open vats, with hand plunging Traditional basket soft pressing. Matured in french barriques for 10 months. Futher matured in bottle for aminimum of 8 months
